1 tbsp olive oil or coconut oil
1 onion, finely chopped
3-4 garlic cloves, minced
250g (around 2 cups) mushrooms, chopped (you can use button, cremini, or a mix of your favorites)
2 tbsp fresh thyme leaves (or 2 tsp dried thyme)
2 tbsp soy sauce or tamari (adjust to taste)
1 tbsp lemon juice
Salt and black pepper, to taste

Start by toasting the walnuts in a dry skillet over medium heat for about 5-7 minutes, or until they become fragrant and lightly browned. Be careful not to burn them. Once toasted, set them aside to cool.

You might need to stop and scrape down the sides of the processor a few times to ensure everything is well combined.
