Ingredients
2 bunches Swiss chard
5 garlic cloves
1 slice of day-old bread
1 teaspoon sweet paprika
2 Tbsp Olive oil
1 tsp Cumin
1 Tbsp Vinegar
Water and salt
Preparation
Clean and steam the Swiss chard for about 15 minutes.
In a pan with olive oil, fry the slice of bread and three whole garlic cloves without the skin.
In a mortar, crush the fried bread along with the three golden garlic cloves, two raw garlic cloves, salt, and a little vinegar (be moderate with the vinegar). Add a bit of water to the mixture and set it aside.
Place the steamed Swiss chard in the pan and sauté it for about five minutes.
After five minutes, add the sweet paprika, a pinch of cumin, and the mixture from the mortar to the pan. Cook everything on low heat for about twenty minutes.
Serve the "esparragado de acelgas" (Swiss chard esparragado).
